Broccoli and Cheese French Toast
Broccoli isn't something you would think to put on top of French Toast; you have to try it to believe it. It started out as an experimental "clear the refrigerator" sort of supper, and immediately won me over with its charms.
A few weeks ago, I rode to the grocery store specifically to get broccoli for this meal. I know I picked up the broccoli along with a few other items, but somehow it didn't make it back home. I didn't get Broccoli that night.
On my trip to the grocery store this evening, I made sure I got the broccoli and that it made it into my bags. I forgot two other things I needed because I was paying so much attention to the broccoli.
In the photo:
- Whole Wheat French Toast (eggs, milk, a little vanilla and butter for the cast iron skillet)
- Steamed (microwaved) Broccoli crowns
- Mozarella Cheese melted in the microwave
Yumm.
I like this because the calories are dense and you cover a number of basic food groups all in one meal that is fairly easy to prepare. It's ideal for feeding a cyclist.
If you serve this to someone, be prepared for hesitation. Once they try it however, be prepared to make another slice.
